Chocolate Pancakes with Mascarpone
April 24, 2019Eating keto doesn’t need to mean giving up all delicious meals. Pancakes are a wonderful weekend treat and here we have a keto-friendly option.

To serve, I recommend strawberries, a low sugar fruit. These are not calculated in the macros, but if you have some carbs to spare they really work well here.
Ingredients:
150 g cottage cheese
2 organic eggs
50g almond flour
Pinch of salt
2 tbsp raw cacao powder
100ml water
Stevia or Monk Fruit to taste
20g (1,5 tbsp) grass fed ghee for frying
Strawberries to serve
Instructions:
1. Mix the mascarpone and eggs with the stick blender.
2. Add the almond flour, tiny bit of salt, raw cacao powder, and stevia and blend all together.
3. As the last ingredient add water, but not all of it once – flours can be different and maybe you do not need all of it.
4. If you are happy with the batter consistency, fry the pancakes on medium heat in plenty of ghee until they are crispy from both sides.
